Christmas Candy Cane Cake...

home baking lifestyle blogChristmas day might be over, but its still December... a month of indulgence, days spent in pjs, watching old movies and eating basically everything and anything. So with that in mind and before January and diets and resolutions start raising their ugly heads I wanted to share my candy cane cake recipe with you guys.

200g caster sugar
200g softened butter
4 egg beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk
For decorating:
100g Butter
140g Icing Sugar
Strawberry Candy canes
candy cane cakeHeat oven to fan 170C. Butter a 15cm tall cake tin. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter. Smooth the surface with a spatula or the back of a spoon, then bake for about 45 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely. To make the butter cream topping, beat the butter until smooth and creamy, then gradually beat in icing sugar. Place the cake on a stand and use a butter knife or spatula to create a rough covering over the top and then as you turn the stand smooth around the sides. Take 3 candy canes and crush with a rolling pin and sprinkle the powder pieces on top and then place some of the remaining candy canes into the cake at  different heights.
