Dark Chocolate Goodness...Sunday, April 10, 2016
Its been a while since I shared a recipe on my blog, I think the last one was my gingerbread men biscuits at Christmas time. Being a bit of a choc-aholic I thought a little chocolate biscuit recipe would be a good one to bake up!
Ingredients: 6oz dark chocolate / 1/4 cup butter / 1/2 cup sugar / 2 eggs / 1 tsp vanilla extract / 1 1/2 cups of flour / 2 tbsp cocoa powder / 3/3 tsp baking powder / 1/4 tsp salt / powdered sugar for rolling.
Melt the dark chocolate & butter over a saucepan of water on the stove. Stir and once melted remove from heat and set aside. Beat the sugar and eggs until smooth, add the vanilla extract and melted chocolate and beat on a medium speed. Sift the flour, cocoa powder, baking powder and salt in a separate bowl. Add the mixture in two batches beating each time. Cover the dough with cling film and chill in the fridge for 2 hours or until firm enough to scoop.
Roll 1 inch balls of dough with your fingers then toss in a bowl of powdered sugar. Bake for 8-10 minutes at 180oC. Allow to cool and enjoy with a cuppa tea or hot chocolate.
