Sweet Sunday: Inside out buttercream cake...Sunday, October 05, 2014
This cake probably has a proper name, but my name for it is the inside out cake. Instead of the buttercream being sandwiched in the middle I have smothered it over the top and sides of this simple sponge cake. Making it kinda messy to eat but the more buttercream the better in my book! All you need it a fork.
- 200g caster sugar
- 200g softened butter
- 4 eggs, beaten
- 200g self-raising flour
- 1 tsp baking powder
- 2 tbsp milk
Pour the mixture into the cake tin and bake for 20minutes until golden brown. Cool on a wire rack.
Slice the cake in half with a large knife and apply a generous layer of raspberry jam.
Then sandwich the two layers back together.
For the buttercream mix equal parts sugar and room temperature butter and beat together.
I applied the buttercream with the back of a spoon to create a rough texture and then covered in little sprinkles. Yum!
Enjoy with a cuppa tea and a movie on netflix. Perfect for a Sunday evening :)
