Sweet Sunday: Inside out buttercream cake...

This cake probably has a proper name, but my name for it is the inside out cake. Instead of the buttercream being sandwiched in the middle I have smothered it over the top and sides of this simple sponge cake. Making it kinda messy to eat but the more buttercream the better in my book! All you need it a fork.
You'll need:

  • 200g caster sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 200g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk
This is such a simple recipe to make. Preheat your oven to 180 degrees(fan). Grease a 20cm sandwich tin. Then beat all the ingredients together in a mixing bowl.

simple-cake-recipe buttercream-cake-recipe-bloSlice the cake in half with a large knife and apply a generous layer of raspberry jam.

Then sandwich the two layers back together.

I applied the buttercream with the back of a spoon to create a rough texture and then covered in little sprinkles. Yum!
