Sweet Sunday: Apple & Sultana MuffinsSunday, October 12, 2014
I said about a month ago now that I was starting a new blog feature called sweet or savoury Sundays. So far Ive been doing it every other Sunday or so (pretty good for me!) but I have yet to do a savoury post! I just find baking so much more relaxing and also a lot easier to photograph than a steaming bowl or saucepan. I promise I will try and do some savoury dishes soon, Im thinking some wintery soups would be tasty!
This little recipe is an adaption of a recipe from Avoca Tea Time, which is a recipe for plain muffins.
250g self raising flour
115g caster sugar
115 unsalted butter
1 egg, beaten
100g of sultanas
1 chopped and diced apple.
Preheat oven 180oC fan. Have a muffin tin ready, I used a silicon one as they are much easier to pop the muffins out later. Mix the flour, sugar in a large bowl & make a well in the centre. Heat the milk & butter together until the butter melts. Although to cool, then add to flour and sugar with the egg.
Mix until smooth, then add the sultanas and chopped apple. Spoon into muffin tins. Bake for 20 minutes.
