Ive wanted to do baking and recipes on my blog for ages but have always talked myself out of it with excuses. Ill wait until my photography skills are better, Ill wait until I have my own kitchen, until my baking skills are better. But I realised I should just stop making excuses and do it!
So as last weekend was mothers day I decided to bake my mums favourite, Gingerbread cupcakes with crystallised stem ginger and lemon icing.
Ingredients:
60g butter/ 50g soft brown sugar/ 2tbsp golden syrup/ 2tbsp black treacle/ 1tsp of ground ginger/ 80ml milk/ 1 egg beaten/ 2 pieces of stem ginger in syrup drained & chopped/ 115g self raising flour.
Icing:
2tbsp lemon juice/ 200g icing sugar/ 2 pieces of stem ginger shaved thin.
Put the butter, sugar, golden syrup, treacle & ground ginger in a saucepan and gently heat and melt.
Move to a glass bowl off the heat, add milk, beat in the egg and add the chopped stem ginger.
Sift in the flour, and spoon into paper cases and bake for approx 20 minutes. I rotated the tray after 10 mins as the back of my oven is hotter than the front.
The recipe called for 2 tablespoons of lemon juice, I like my icing super zesty and not too thick so I used the juice from a whole lemon and 1 tablespoon of water.
Spread the icing on with a flat palette knife and top with a thinly shaved piece of stem ginger and enjoy!
So I did it, my first foodie post! My photography skills aren't quite up to scratch but Im hoping Ill improve with practise! Let me know if this is the kind of thing you'd like to see more of on my blog :)

I know what you mane though, I had the same thoughts and finally just went for it and feel like I've improved my cooking/baking posts with experience.
